No harvest is the same as the one before it, and no year reveals itself immediately. Not only the vineyard as a whole, but each parcel, each row, sometimes even each bunch. <\/p>\n<p>As summer advances, the work becomes progressively more subtle: we check the colour of the berries and the texture of the skins, always aiming to <strong>preserve the balance between freshness and concentration<\/strong>.<\/p>\n<p>The question that keeps returning is not simply, \u201cWhen do we pick?\u201d, but rather, \u201c<em>When does this fruit best express what it has become<\/em>?\u201d<\/p>\n<h2>The value of time in viticulture.<\/h2>\n<p>In the vineyard, <strong>nothing can be rushed<\/strong>.<\/p>\n<p>Every season has its own logic and, above all, its own timing. Very hot vintages, for example, tend to speed things up and bring harvest forward; in other years, rain and more even conditions can extend the wait. <\/p>\n<p>This year, harvest will begin about <strong>a week earlier than usual<\/strong>, following the higher temperatures of the past few weeks; even so, we expect <strong>a balanced vintage<\/strong> thanks to the plentiful water reserves the vines can draw on.<\/p>\n<p>The most important part of the work is knowing how to read these signals without forcing them. Ripeness is not just about sugar: it also concerns acidity, structure, the integrity of the berries and their ability to reach the winery in the best possible condition. <\/p>\n<h2>Preparing the cellar means preparing the future.<\/h2>\n<p>At this time of year, the cellar also enters a special state of attention. Tanks must be prepared, spaces organised, the team aligned and timings coordinated. Harvest is the point where vineyard work and cellar work stop being two separate moments and become one single process.  <\/p>\n<p>And from that point on, everything changes quickly: the must begins to ferment, timings tighten, decisions have to be made with clarity.<\/p>\n<p>For this reason, preparing for harvest is never only a technical exercise.
